Get Stronger Before Fighting Them

Before facing Varkas and Sydonia, you might want to leave Mt. Seifu first and go to Lenankamp to purchase Medicine, upgrade your weapons at the blacksmith, and buy better armour in the various stores there.

You can also take this chance to grind EXP and level up so that you're as strong as possible heading into the boss fight.

Equip the Fortune and Prosperity Runes

Since you're not facing the boss yet, you can equip the Fortune and Prosperity Runes on Gremio and Cleo to make the grind for EXP and Potch a lot easier. You can get these from pre-ordering the game or visiting Sarady at the start of the game.

Focus on Defeating Sydonia First

Sydonia only has 140 HP compared to Varkas' 210 HP, making the former easier to take down. Prioritize defeating them first so that your party only has to worry about taking damage from one boss instead of two.

Have Cleo Use Fire Magic on Varkas

Cleo should have the Fire Rune equipped and would be able to use attacks like Flaming Arrows and Firestorm. Use these Fire Spells on Varkas, who is not resistant to Fire magic, while the rest of the party focuses on taking Sydonia down as quickly as possible.
